Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add 1/2 diced onion and 2 cloves of minced garlic to the skillet and sauté until the onion is translucent.
  • Add the crumbled tofu to the skillet and sprinkle with 1/2 teaspoon of turmeric and 1/2 teaspoon of cumin. Stir to combine and cook for 3-4 minutes.
  • Add 2 cups of chopped fresh spinach to the skillet and cook until the spinach is wilted, about 2-3 minutes.
  • Season with salt and pepper to taste, and stir to combine all the ingredients.
  • Remove from heat and serve the tofu and spinach scramble hot.
