Ingredients
- 1 block of firm tofu, drained and crumbled
- 2 cups of fresh spinach, chopped
- 1/2 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of cumin
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 1/2 diced onion and 2 cloves of minced garlic to the skillet and sauté until the onion is translucent.
- Add the crumbled tofu to the skillet and sprinkle with 1/2 teaspoon of turmeric and 1/2 teaspoon of cumin. Stir to combine and cook for 3-4 minutes.
- Add 2 cups of chopped fresh spinach to the skillet and cook until the spinach is wilted, about 2-3 minutes.
- Season with salt and pepper to taste, and stir to combine all the ingredients.
- Remove from heat and serve the tofu and spinach scramble hot.
