  • 1 teaspoon of minced ginger
  • 2 cloves of garlic, minced
  • 1/4 cup of vegetable broth
  • 2 tablespoons of vegetable oil
  • Cooked rice, for serving

Instructions

  • In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of hoisin sauce, 1 tablespoon of sesame oil, and 1 tablespoon of cornstarch. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add 1 teaspoon of minced ginger and 2 cloves of minced garlic, and cook for 1 minute until fragrant.
  • Add 2 cups of broccoli florets to the skillet and stir-fry for 3-4 minutes until tender-crisp.
  • Pour in 1/4 cup of vegetable broth and the sauce mixture. Stir well and bring to a simmer.
  • Add the cooked tofu back to the skillet and toss to coat everything in the sauce. Cook for an additional 2-3 minutes until the sauce has thickened.
  • Stir in 1/2 cup of cashews and cook for 1 minute to warm through.
  • Serve the tofu and broccoli stir-fry over cooked rice and enjoy!
