Ingredients
- 1 1/2 cups of crushed ladyfinger cookies
- 1/4 cup of melted butter
- 2 tablespoons of instant espresso powder
- 1/4 cup of hot water
- 3 (8-ounce) packages of cream cheese, softened
- 1 cup of white sugar
- 1 teaspoon of vanilla extract
- 3 eggs
- 1/4 cup of unsweetened cocoa powder
- 1/4 cup of powdered sugar
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a small bowl, mix the crushed ladyfinger cookies and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In another small bowl, dissolve the instant espresso powder in hot water. Set aside.
- In a large bowl, beat the cream cheese, white sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Pour half of the cream cheese mixture over the crust.
- Stir the espresso mixture into the remaining cream cheese mixture. Pour over the first layer in the pan.
- Bake in the preheated oven for 45 minutes, or until the center is almost set. Allow the cheesecake to cool completely, then refrigerate for at least 3 hours or overnight.
- Before serving, mix the cocoa powder and powdered sugar and sift over the top of the cheesecake for an extra dusting of cocoa powder.
