Instructions

  • In a medium saucepan, whisk together 6 egg yolks and 3/4 cup sugar until well blended.
  • Whisk in 2/3 cup milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, remove from heat and allow to cool slightly.
  • In a medium bowl, beat 1 1/4 cups heavy cream with 1/2 teaspoon vanilla extract until stiff peaks form.
  • Whisk mascarpone into yolk mixture until smooth.
  • In a small bowl, combine 1/2 cup cooled coffee and 3 tablespoons rum.
  • Dip ladyfingers into coffee mixture and arrange in a single layer in a 9x13 inch baking dish.
  • Spread half of mascarpone mixture over ladyfingers, then repeat layers.
  • Cover and refrigerate for 4 hours.
  • Before serving, sift 2 tablespoons cocoa powder over the top.
