Ingredients
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1/2 cup creamy peanut butter
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1/4 cup water
- 1/4 tsp red pepper flakes
- 4 large flour tortillas
- 2 cups shredded lettuce
- 1 red bell pepper, thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts
Instructions
- In a small saucepan, combine 1/2 cup creamy peanut butter, 3 tbsp soy sauce, 2 tbsp honey, 2 tbsp rice vinegar, 1 tbsp sesame oil, 1/4 cup water, and 1/4 tsp red pepper flakes. Cook over low heat, stirring constantly, until smooth and heated through.
- Lay out the 4 large flour tortillas and divide the shredded lettuce, sliced red bell pepper, shredded carrots, and chopped fresh cilantro evenly among them.
- Top each tortilla with the cooked and shredded chicken, then drizzle with the prepared peanut sauce.
- Sprinkle each wrap with chopped peanuts, then fold in the sides and roll up tightly.
- If desired, heat a large skillet over medium heat and lightly toast each wrap for 1-2 minutes on each side until golden brown and crispy.
