Ingredients
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 lemongrass stalks, finely chopped
- 3 cloves garlic, minced
- 1 red chili, finely chopped
- 2 tbsp fish sauce
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp brown sugar
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup roasted peanuts, chopped
- 4 cups mixed salad greens
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1/4 cup cherry tomatoes, halved
Instructions
- In a bowl, combine the lemongrass, garlic, red chili, fish sauce, soy sauce, lime juice, and brown sugar. Add the sliced chicken and marinate for at least 15 minutes.
- Heat a grill or grill pan over medium-high heat. Grill the marinated chicken for 3-4 minutes on each side, or until cooked through. Remove from heat and let it rest for 5 minutes.
- In a large bowl, toss the mixed salad greens, cucumber, carrot, and cherry tomatoes.
- Slice the grilled chicken and add it to the salad.
- Garnish the salad with fresh cilantro, mint leaves, and chopped peanuts.
- Drizzle with additional lime juice and fish sauce if desired.
- Toss the salad gently to combine all the ingredients.
- Serve immediately and enjoy!
