Ingredients
- 1 lb fish fillets, cut into chunks
- 2 tbsp green curry paste
- 1 can (14 oz) coconut milk
- 1 cup chicken or vegetable broth
- 1 red bell pepper, sliced
- 1 cup bamboo shoots
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup Thai basil leaves
- 2 kaffir lime leaves
- 2 tbsp vegetable oil
Instructions
- In a large skillet, heat 2 tbsp of vegetable oil over medium heat.
- Add 2 tbsp of green curry paste to the skillet and stir-fry for 1-2 minutes until fragrant.
- Pour in 1 can of coconut milk and 1 cup of chicken or vegetable broth. Stir to combine and bring to a simmer.
- Add the fish fillets, 1 sliced red bell pepper, and 1 cup of bamboo shoots to the skillet. Simmer for 5-7 minutes until the fish is cooked through.
- Stir in 1 tbsp of fish sauce and 1 tbsp of brown sugar. Add 2 kaffir lime leaves and 1 cup of Thai basil leaves. Simmer for an additional 2-3 minutes.
- Remove from heat and discard the kaffir lime leaves.
- Serve the Thai green curry with fish hot over steamed rice or noodles. Enjoy!
