Ingredients
- 8 rice paper wrappers
- 1 cup cooked vermicelli noodles

- 1/2 cup unsalted peanuts, chopped
- Peanut Dipping Sauce:
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 2-4 tablespoons warm water
Instructions
- Prepare the ingredients for the spring rolls by cooking the vermicelli noodles according to package instructions, shredding the lettuce, and julienning the carrots and cucumber.
