Instructions

  • In a blender, combine 1/2 cup chipotle peppers in adobo sauce, 1/4 cup tomato sauce, 2 cloves minced garlic, 1 tsp cumin, 1 tsp paprika, and 1/2 tsp oregano. Blend until smooth to make the spicy chipotle sauce.
  • In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste. Remove from the skillet and set aside.
  • In the same skillet, add the diced onion and red bell pepper. Cook until softened, about 5 minutes.
  • Add the cooked rice, black beans, and the prepared spicy chipotle sauce to the skillet. Stir to combine and cook for an additional 2-3 minutes until heated through.
  • Lay out the flour tortillas and divide the chicken and rice mixture evenly among them. Top each with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
