Ingredients
- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 1/2 cup chipotle peppers in adobo sauce
- 1/4 cup tomato sauce
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1/4 cup chicken broth
Instructions
- In a blender, combine 1/2 cup chipotle peppers in adobo sauce, 1/4 cup tomato sauce, 2 cloves minced garlic, 1 tsp cumin, 1 tsp paprika, and 1/2 tsp oregano. Blend until smooth to make the spicy chipotle sauce.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and red bell pepper. Cook until softened, about 5 minutes.
- Add the cooked rice, black beans, and the prepared spicy chipotle sauce to the skillet. Stir to combine and cook for an additional 2-3 minutes until heated through.
- Lay out the flour tortillas and divide the chicken and rice mixture evenly among them. Top each with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.
- Fold in the sides of the tortillas and roll them up tightly to form burritos.
- In a clean skillet, heat the burritos over medium heat for 2-3 minutes on each side until golden and crispy.
