Ingredients
- 1 block of firm tofu, pressed and cut into cubes
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of brown sugar
- 1 tablespoon of cornstarch
- 1 tablespoon of sesame oil
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 cup of broccoli florets
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup of snap peas
- 2 green onions, chopped
- Cooked rice or noodles for serving
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, and 1 tablespoon of cornstarch. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the grated ginger and minced garlic. Cook for 1-2 minutes until fragrant.
- Add the broccoli, bell pepper, carrot, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Pour the teriyaki sauce over the vegetables and tofu in the skillet. Cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the tofu and vegetables.
- Remove from heat and stir in the chopped green onions.
- Serve the teriyaki tofu and stir-fried vegetables over cooked rice or noodles. Enjoy!
