Teriyaki Marinated Tofu

Ingredients
- 1 block (14 oz) of firm tofu, drained and pressed
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of brown sugar
- 1 tablespoon of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated ginger
- 1 tablespoon of cornstarch
- 2 tablespoons of water
- Sesame seeds and green onions for garnish
Instructions
- Cut the pressed tofu into 1-inch cubes and place them in a shallow dish.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, 1 tablespoon of sesame oil, 2 cloves of minced garlic, and 1 teaspoon of grated ginger to make the teriyaki marinade.
- Pour the marinade over the tofu, making sure all the pieces are coated. Cover and refrigerate for at least 1 hour, turning the tofu halfway through to ensure even marination.
- After marinating, remove the tofu from the dish and set aside. Transfer the marinade to a small saucepan and bring to a simmer over medium heat.
- In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Slowly pour the slurry into the simmering marinade, stirring constantly until the sauce thickens.
- Heat a non-stick skillet over medium-high heat and add the marinated tofu cubes. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Pour the thickened teriyaki sauce over the tofu in the skillet and toss to coat the tofu evenly. Cook for an additional 2-3 minutes, allowing the sauce to caramelize and glaze the tofu.
- Remove from heat and garnish with sesame seeds and chopped green onions. Serve the teriyaki marinated tofu hot with steamed rice or vegetables. Enjoy!
