  • 1 block of firm tofu, pressed and cubed

  • 2 tablespoons of brown sugar
  • 1 tablespoon of cornstarch
  • 1 tablespoon of sesame oil
  • 1 tablespoon of minced ginger
  • 3 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • Cooked rice or noodles, for serving
  • Sesame seeds and green onions, for garnish

Instructions

  • In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, and 1 tablespoon of cornstarch. Set aside.
  • In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add 1 more tablespoon of sesame oil. Add 1 tablespoon of minced ginger and 3 cloves of minced garlic, and cook for 1 minute until fragrant.
  • Add the sliced red and yellow bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the crispy tofu to the skillet. Pour the teriyaki sauce over the tofu and vegetables. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
  • Serve the teriyaki glazed tofu stir-fry over cooked rice or noodles. Garnish with sesame seeds and sliced green onions. Enjoy!
