Teriyaki Glazed Tofu Stir-Fry

Ingredients
- 1 block of firm tofu, pressed and cubed
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of brown sugar
- 1 tablespoon of cornstarch
- 1 tablespoon of sesame oil
- 1 tablespoon of minced ginger
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- Cooked rice or noodles, for serving
- Sesame seeds and green onions, for garnish
Instructions
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of brown sugar, and 1 tablespoon of cornstarch. Set aside.
- In a large non-stick skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add 1 more tablespoon of sesame oil. Add 1 tablespoon of minced ginger and 3 cloves of minced garlic, and cook for 1 minute until fragrant.
- Add the sliced red and yellow bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the crispy tofu to the skillet. Pour the teriyaki sauce over the tofu and vegetables. Stir well to coat everything in the sauce and cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
- Serve the teriyaki glazed tofu stir-fry over cooked rice or noodles. Garnish with sesame seeds and sliced green onions. Enjoy!
