Instructions

  • In a small saucepan, combine 1 cup of tamarind pulp and 2 cups of water. Bring to a simmer over medium heat, then remove from heat and let it cool for 5 minutes.
  • Strain the tamarind mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
  • Stir in 1/2 cup of sugar until dissolved.
  • Add the remaining 2 cups of water and the juice of 1 lime to the pitcher. Stir well to combine.
  • Refrigerate the tamarind agua fresca until chilled, about 1 hour.
  • Serve the tamarind agua fresca over ice cubes, garnished with lime slices. Enjoy!
