  • 1/2 cup tomato sauce
  • 12 dried corn husks, soaked in warm water

Instructions

  • In a large bowl, mix 2 cups of masa harina, 1 1/2 cups of vegetable broth, 1/2 cup of coconut oil, 1 teaspoon of baking powder, and 1 teaspoon of salt to form a smooth dough.
  • In a skillet, sauté 2 cups of shredded jackfruit, 1 diced onion, and 3 minced garlic cloves until the onion is translucent.
  • Add 1 teaspoon of cumin, 1 teaspoon of chili powder, 1/2 teaspoon of paprika, and 1/2 cup of tomato sauce to the skillet and cook for an additional 5 minutes.
  • Take a soaked corn husk and spread 2 tablespoons of the masa dough onto the center of the husk, leaving a border around the edges.
  • Place 2 tablespoons of the jackfruit filling down the center of the masa dough.
  • Fold one side of the corn husk over the filling, then fold the other side to enclose the filling, and fold up the bottom.
  • Place the tamales upright in a steamer and steam for 60-90 minutes, adding more water to the steamer as needed.
  • Allow the tamales to cool for 10 minutes before serving. Enjoy your vegan jackfruit tamales!
