- 1 pound ground beef
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes

- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large skillet, cook 1 pound of ground beef, 1 chopped onion, 1 chopped red bell pepper, and 2 minced garlic cloves over medium heat until the beef is no longer pink and the vegetables are tender. Drain any excess fat.
- Stir in 1 can of black beans, 1 can of diced tomatoes, 1 cup of frozen corn, 1 tablespoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Simmer for 5 minutes, then transfer the mixture to the prepared baking dish.
