Ingredients
- 4 medium zucchinis, spiralized
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the spiralized zucchini noodles to the skillet and sauté for 3-4 minutes, or until just tender. Season with salt and pepper to taste. Remove from the skillet and set aside.
- In the same skillet, add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Stir in the taco seasoning and cook for an additional 2-3 minutes.
- Add the cooked zucchini noodles back to the skillet and toss to combine with the beef and seasoning.
- Sprinkle the shredded cheddar cheese over the top of the zucchini and beef mixture. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted.
- Remove from heat and top with diced tomatoes and chopped cilantro before serving.
