Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 1 packet taco seasoning mix
- 4 cups beef broth
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Tortilla chips, for serving
Instructions
- In a large pot, brown 1 pound of ground beef over medium heat, breaking it up with a spoon as it cooks.
- Add 1 chopped onion to the pot and cook until the onion is soft and the beef is browned.
- Stir in 1 can of black beans, 1 can of pinto beans, 1 can of corn, 1 can of diced tomatoes, 1 can of diced green chilies, and 1 packet of taco seasoning mix.
- Pour in 4 cups of beef broth and 1 cup of salsa. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Serve the soup hot, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro. Serve with tortilla chips on the side.
