Ingredients
- 8 ounces elbow macaroni
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can (14.5 ounces) diced tomatoes
- 1 can (4 ounces) diced green chilies
- 2 cups shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions. Drain and set aside.
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.
- Stir in the taco seasoning, diced tomatoes, and diced green chilies. Cook for 5 minutes, stirring occasionally.
- Add the cooked macaroni to the skillet and stir to combine with the beef mixture.
- In a separate saucepan, heat the milk over medium heat. Once warm, add the shredded cheddar cheese and stir until melted and smooth.
- Stir the cheese sauce into the macaroni and beef mixture. Cook for an additional 2-3 minutes, until heated through.
- Remove from heat and stir in the sour cream and chopped cilantro. Season with salt and pepper to taste.
