Tabbouleh Bowl

Ingredients
- 1 cup bulgur wheat
- 1 1/2 cups chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped red onion
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- Salt and pepper to taste
Instructions
- In a medium bowl, pour 1 cup of bulgur wheat and cover with 2 cups of boiling water. Let it sit for 15-20 minutes until the bulgur is tender and has absorbed all the water. Fluff with a fork and let it cool.
- In a large mixing bowl, combine 1 1/2 cups of chopped fresh parsley, 1/2 cup of chopped fresh mint, 1/2 cup of diced cucumber, 1/2 cup of diced tomatoes, and 1/4 cup of finely chopped red onion.
- Add the cooled bulgur to the bowl and mix well with the vegetables and herbs.
- In a small bowl, whisk together 1/4 cup of olive oil, 1/4 cup of fresh lemon juice, salt, and pepper.
- Pour the dressing over the tabbouleh and toss to combine.
- Divide the tabbouleh into serving bowls and enjoy!
