Ingredients
- 1 bunch of Swiss chard, stems removed and leaves chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 cans of white beans, drained and rinsed
- 6 cups of vegetable broth
- 1 lemon, juiced and zested
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped Swiss chard leaves to the pot and cook until wilted, about 5 minutes.
- Pour in the vegetable broth and bring the soup to a simmer.
- Stir in the drained and rinsed white beans, dried thyme, and the juice and zest of 1 lemon.
- Season the soup with salt and pepper to taste.
- Simmer the soup for 15-20 minutes to allow the flavors to meld together.
- Taste and adjust seasoning if needed.
