Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the chopped Swiss chard leaves to the pot and cook until wilted, about 5 minutes.
  • Pour in the vegetable broth and bring the soup to a simmer.
  • Stir in the drained and rinsed white beans, dried thyme, and the juice and zest of 1 lemon.
  • Season the soup with salt and pepper to taste.
  • Simmer the soup for 15-20 minutes to allow the flavors to meld together.
  • Taste and adjust seasoning if needed.
  • Serve the Swiss chard and white bean soup hot, garnished with a slice of lemon and a sprinkle of fresh thyme if desired.
