Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 pounds sweet potatoes, peeled and diced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/2 cup coconut milk
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the diced sweet potatoes, vegetable broth, ground cumin, ground cinnamon, and cayenne pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
- Stir in the coconut milk and season with salt and pepper to taste.
- Simmer for an additional 5 minutes to heat through.
- Ladle the soup into bowls and garnish with chopped fresh cilantro before serving.
