  • 1/2 cup coconut milk
  • Chopped fresh cilantro for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute.
  • Add the diced sweet potatoes, vegetable broth, ground cumin, ground cinnamon, and cayenne pepper to the pot.
  • Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.
  • Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
  • Stir in the coconut milk and season with salt and pepper to taste.
  • Simmer for an additional 5 minutes to heat through.
  • Ladle the soup into bowls and garnish with chopped fresh cilantro before serving.
