Instructions

  • Add the Arborio rice to the saucepan and stir to coat with the oil, onion, and garlic mixture.
  • Pour in the dry white wine and cook, stirring constantly, until the wine is absorbed by the rice.
  • Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Cook for about 20 minutes or until the rice is creamy and tender.
  • Stir in the mashed sweet potatoes and grated Parmesan cheese until well combined and creamy.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.
  • Serve hot and enjoy!
