Ingredients
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 4 cups vegetable broth
- 2 cups mashed sweet potatoes
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large saucepan, heat 2 tablespoons of olive oil over medium heat.
- Add the finely chopped onion and cook until softened, about 3 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the Arborio rice to the saucepan and stir to coat with the oil, onion, and garlic mixture.
- Pour in the dry white wine and cook, stirring constantly, until the wine is absorbed by the rice.
- Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Cook for about 20 minutes or until the rice is creamy and tender.
- Stir in the mashed sweet potatoes and grated Parmesan cheese until well combined and creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
