Ingredients
- 2 large sweet potatoes, peeled and grated
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole wheat burger buns
- Toppings of your choice (lettuce, tomato, avocado, etc.)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the grated sweet potatoes, black beans, bread crumbs, red onion, garlic, cumin, paprika, salt, and black pepper. Mix well until everything is evenly combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Place the patties on the prepared baking sheet and bake for 10 minutes. Flip the patties and bake for an additional 10 minutes, or until they are golden and crispy.
- While the patties are baking, toast the burger buns in a toaster or on a skillet until lightly golden.
- Assemble the burgers by placing a sweet potato patty on the bottom half of each bun. Add your choice of toppings and cover with the top half of the bun.
- Serve the sweet potato burgers immediately and enjoy!
