Created by: Howcan Team

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1/2 pound of sausage, casings removed
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 4 eggs

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced sweet potatoes to the skillet and cook, stirring occasionally, until they are tender and lightly browned, about 10-12 minutes. Season with salt and pepper to taste. Remove the sweet potatoes from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and cook the sausage, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes.
  • Add the diced onion, red bell pepper, and minced garlic to the skillet with the sausage. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  • Stir in the paprika and dried thyme, then add the cooked sweet potatoes back to the skillet. Mix everything together and cook for an additional 2-3 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper if needed.
  • In a separate non-stick skillet, fry the eggs to your desired doneness.
  • Divide the sweet potato and sausage hash among 4 plates and top each serving with a fried egg. Serve hot and enjoy!

Sweet Potato and Sausage Hash is a hearty and flavorful dish that has its roots in Southern cuisine. This dish has gained popularity for its delicious combination of sweet and savory flavors. The sweet potatoes add a natural sweetness and a hearty texture, while the sausage brings a rich and savory element to the dish. Chefs in the Southern United States, particularly in regions like the Carolinas and Georgia, have perfected this dish, often using locally sourced sweet potatoes and artisanal sausages to elevate the flavors. The best version of this dish can be found in local diners and farm-to-table restaurants that prioritize fresh, high-quality ingredients. It's important to get the balance of sweet potatoes and sausage just right to achieve the perfect flavor profile. Some alternative methods for making this dish include adding bell peppers or onions for extra flavor, or topping it with a fried egg for a delicious breakfast twist.
