  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced sweet potatoes to the skillet and cook, stirring occasionally, until they are tender and lightly browned, about 10-12 minutes. Season with salt and pepper to taste. Remove the sweet potatoes from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and cook the sausage, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes.
  • Add the diced onion, red bell pepper, and minced garlic to the skillet with the sausage. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  • Stir in the paprika and dried thyme, then add the cooked sweet potatoes back to the skillet. Mix everything together and cook for an additional 2-3 minutes to allow the flavors to meld. Adjust seasoning with salt and pepper if needed.
  • In a separate non-stick skillet, fry the eggs to your desired doneness.
  • Divide the sweet potato and sausage hash among 4 plates and top each serving with a fried egg. Serve hot and enjoy!
