Sweet and Sour Pork Stir-Fry

Ingredients
- 1 pound pork tenderloin, cut into 1-inch cubes
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 teaspoon minced ginger
- 1 teaspoon minced garlic
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Cooked white rice for serving
Instructions
- In a large bowl, toss the pork cubes with 1/4 cup of cornstarch until evenly coated.
- In a wok or large skillet, heat the vegetable oil over medium-high heat.
- Add the coated pork cubes to the hot oil and stir-fry for 5-6 minutes, or until golden brown and cooked through. Remove the pork from the wok and set aside.
- In the same wok, add the red and green bell peppers and stir-fry for 2-3 minutes, or until slightly tender.
- Add the pineapple chunks to the wok and stir-fry for an additional 1-2 minutes.
- In a small bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, minced ginger, and minced garlic.
- Pour the sauce mixture into the wok with the peppers and pineapple. Bring to a simmer and cook for 2-3 minutes, or until the sauce thickens slightly.
- Stir in the cornstarch-water mixture and cook for an additional 1-2 minutes, or until the sauce thickens to your desired consistency.
- Return the cooked pork to the wok and toss to coat in the sweet and sour sauce. Season with salt and pepper to taste.
- Serve the sweet and sour pork stir-fry over cooked white rice and enjoy!
