  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  • In a large bowl, toss the pork cubes with 1/4 cup of cornstarch until evenly coated.
  • In a wok or large skillet, heat the vegetable oil over medium-high heat.
  • Add the coated pork cubes to the hot oil and stir-fry for 5-6 minutes, or until golden brown and cooked through. Remove the pork from the wok and set aside.
  • In the same wok, add the red and green bell peppers and stir-fry for 2-3 minutes, or until slightly tender.
  • Add the pineapple chunks to the wok and stir-fry for an additional 1-2 minutes.
  • In a small bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, minced ginger, and minced garlic.
  • Pour the sauce mixture into the wok with the peppers and pineapple. Bring to a simmer and cook for 2-3 minutes, or until the sauce thickens slightly.
  • Stir in the cornstarch-water mixture and cook for an additional 1-2 minutes, or until the sauce thickens to your desired consistency.
  • Return the cooked pork to the wok and toss to coat in the sweet and sour sauce. Season with salt and pepper to taste.
  • Serve the sweet and sour pork stir-fry over cooked white rice and enjoy!
