  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Clean the portobello mushrooms and remove the stems. Place them on a baking sheet, gill side up.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  • Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.
  • Spoon the breadcrumb mixture into the cavity of each portobello mushroom, pressing down gently to pack the filling.
  • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  • Serve hot and enjoy!
