Stuffed Portobello Mushrooms

Ingredients
- 4 large portobello mushrooms
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Clean the portobello mushrooms and remove the stems. Place them on a baking sheet, gill side up.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, and chopped parsley. Season with salt and pepper to taste.
- Spoon the breadcrumb mixture into the cavity of each portobello mushroom, pressing down gently to pack the filling.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
- Serve hot and enjoy!
