- 1 cup of oats
- 1 ripe banana, mashed
- 1/2 cup of chopped strawberries
- 1/2 cup of milk
- 1 egg
- 1 teaspoon of baking powder

- 1/4 teaspoon of salt
- 1 tablespoon of honey or maple syrup
- 1 tablespoon of vegetable oil or cooking spray
Instructions
- In a blender or food processor, blend 1 cup of oats until they form a fine flour-like consistency.
- In a large mixing bowl, combine the oat flour, mashed banana, chopped strawberries, 1/2 cup of milk, 1 egg, 1 teaspoon of baking powder, 1/2 teaspoon of cinnamon, 1/4 teaspoon of salt, and 1 tablespoon of honey or maple syrup. Mix until well combined.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with 1 tablespoon of vegetable oil or cooking spray.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
