Ingredients
- 14 oz firm tofu, drained and cubed
- 8 oz mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1 tsp ginger, minced
- 2 cloves garlic, minced
- 1/2 cup vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
- 2 green onions, chopped (optional, for garnish)
Instructions
- In a small bowl, mix 2 tbsp of soy sauce, 1 tbsp of sesame oil, and 1 tbsp of cornstarch. Set aside.
- Heat 2 tbsp of vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu to the skillet and stir-fry for 5-6 minutes, or until golden brown. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced mushrooms, minced ginger, and minced garlic. Stir-fry for 2-3 minutes, or until the mushrooms are tender.
- Pour in 1/2 cup of vegetable broth and the soy sauce mixture. Stir well and bring to a simmer.
- Add the stir-fried tofu back into the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes, or until the sauce thickens.
- Season with salt and pepper to taste.
- Garnish with chopped green onions, if desired, and serve hot over steamed rice or noodles.
