Ingredients
- 1 block of firm tofu, drained and cubed
- 2 cups of mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 1/4 cup of soy sauce
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 1 tablespoon of cornstarch
- 1/4 cup of vegetable broth
- 2 cups of jasmine rice
- 4 cups of water
Instructions
- Prepare the jasmine rice by rinsing it under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- In a small bowl, whisk together the soy sauce, sesame oil, garlic, ginger, cornstarch, and vegetable broth. Set aside.
