Ingredients
- 14 oz firm tofu, drained and cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 1/4 cup vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a small bowl, mix 3 tbsp soy sauce, 2 tbsp sesame oil, minced garlic, grated ginger, and cornstarch. Set aside.
- Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat.
- Add the cubed tofu and stir-fry for 5-6 minutes, or until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes, or until they are tender-crisp.
- Return the tofu to the skillet, pour in the soy sauce mixture and vegetable broth. Stir-fry for an additional 2-3 minutes, or until the sauce thickens and coats the tofu and vegetables.
- Season with salt and pepper to taste.
