  • 1 package of seitan, sliced into strips
  • 2 tablespoons of vegetable oil
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of sliced carrots
  • 1/4 cup of soy sauce
  • 2 tablespoons of hoisin sauce
  • 1 tablespoon of cornstarch
  • 1/2 cup of vegetable broth
  • 1 teaspoon of sesame oil
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

  • 1 teaspoon of sesame oil
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the soy sauce, hoisin sauce, cornstarch, vegetable broth, sesame oil, and ginger. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the seitan strips and stir-fry for 3-4 minutes until lightly browned. Remove from the skillet and set aside.
  • Add the remaining tablespoon of vegetable oil to the skillet. Add the onion, garlic, bell pepper, broccoli, and carrots. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  • Return the seitan to the skillet and pour the sauce over the seitan and vegetables. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the seitan and vegetables.
  • Season with salt and pepper to taste.
  • Serve the stir-fried seitan and mixed vegetables hot over steamed rice or noodles. Enjoy!
