  • 1 pound flank steak, thinly sliced
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 8 large flour tortillas
  • 3 cups shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

  • 1 small onion, thinly sliced
  • 8 large flour tortillas
  • 3 cups shredded Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

Instructions

  • In a large bowl, toss the thinly sliced flank steak with 2 tablespoons of taco seasoning until evenly coated.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned steak and cook for 3-4 minutes, stirring occasionally, until browned and cooked through. Remove the steak from the skillet and set aside.
  • In the same skillet, add the sliced red and green bell peppers, and the onion. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.
  • Wipe the skillet clean and return it to the heat. Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded Mexican blend cheese evenly over the tortilla. Arrange a portion of the cooked steak and sautéed vegetables on one half of the tortilla. Sprinkle with 1 tablespoon of chopped fresh cilantro. Fold the other half of the tortilla over the filling to create a half-moon shape.
  • Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling ingredients.
  • Slice the cooked quesadillas into wedges and serve with sour cream, salsa, and guacamole for dipping. Enjoy!
