Ingredients
- 1 pound flank steak, sliced into thin strips
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 8 flour tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, lime wedges
Instructions
- In a large bowl, combine the sliced flank steak, olive oil, minced garlic, chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper. Toss to coat the steak evenly. Let it marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add the marinated steak strips and cook for 3-4 minutes, or until browned. Remove the steak from the skillet and set aside.

- Return the cooked steak to the skillet with the vegetables. Stir to combine and heat through for 1-2 minutes.
- Warm the flour tortillas in a separate skillet or in the microwave.
- To serve, spoon the steak and vegetable mixture onto the warm tortillas. Add optional toppings such as sour cream, guacamole, salsa, shredded cheese, and a squeeze of lime juice.
- Roll up the tortillas and serve immediately. Enjoy your delicious steak fajitas!
Steak fajitas have a rich history that dates back to the ranch lands of West Texas, where Mexican cowboys, known as vaqueros, would grill skirt steak over an open flame. The dish gained popularity in the 1930s when it was introduced to the menus of Mexican restaurants in the Rio Grande Valley. The sizzling sound and tantalizing aroma of the steak, peppers, and onions being served on a hot skillet quickly became a hit. Today, the best steak fajitas can be found in Tex-Mex restaurants across Texas, particularly in San Antonio and Austin. The key to perfect steak fajitas lies in marinating the meat with a blend of spices and lime juice, and then grilling it to tender perfection. The sizzling presentation on a hot skillet with caramelized onions and peppers is a must for an authentic experience. For a twist, some chefs also add a splash of tequila to the marinade for an extra kick. Whether enjoyed in a bustling restaurant or homemade with care, steak fajitas continue to be a beloved dish that brings people together over sizzling, flavorful goodness.
