Created by: Howcan Team
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of fresh spinach, chopped
- 1/2 cup of crumbled feta cheese
- 8 slices of bacon
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil and place a wire rack on top.
- In a small bowl, mix together the chopped spinach, crumbled feta cheese, garlic powder, and paprika.
- Using a sharp knife, make a deep slit in the side of each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.
- Stuff each chicken breast with the spinach and feta mixture, then season the outside of the chicken with salt and pepper.
- Wrap 2 slices of bacon around each stuffed chicken breast, securing with toothpicks if necessary.
- Heat the olive oil in a large skillet over medium-high heat. Sear the bacon-wrapped chicken breasts for 2-3 minutes on each side, until the bacon is slightly crispy.
- Transfer the chicken breasts to the prepared wire rack on the baking sheet. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
- Remove the toothpicks before serving. Enjoy your bacon-wrapped spinach and feta stuffed chicken breast!
