Instructions

  • Preheat the oven to 375 degrees F.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for 1 minute.
  • Add 2 cups of chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
  • In a bowl, mix the cooked spinach with 1/2 cup of crumbled feta cheese, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each chicken breast with the spinach and feta mixture.
  • Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
  • Let the chicken rest for 5 minutes before serving. Enjoy!
