Spinach and Feta Stuffed Breadsticks

Ingredients
- 1 pound pizza dough
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and let cool.
- On a lightly floured surface, roll out the pizza dough into a 12x8 inch rectangle.
- Spread the cooled spinach mixture evenly over the dough, leaving a 1-inch border along one long edge.
- Sprinkle the crumbled feta and grated Parmesan cheese over the spinach.
- Starting at the long edge opposite the border, roll up the dough tightly, jelly-roll style. Pinch the seam to seal.
- Cut the rolled dough into 12 equal pieces. Place the pieces on the prepared baking sheet, seam side down.
- Brush the tops of the breadsticks with the beaten egg.
- Bake for 18-20 minutes, or until the breadsticks are golden brown and cooked through.
- Allow to cool for a few minutes before serving. Enjoy!
