Ingredients
- 1 cup of long-grain white rice
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 cup of diced tomatoes
- 1 cup of diced okra
- 1 teaspoon of cayenne pepper
- 1 teaspoon of paprika
- 1/2 teaspoon of thyme
- 1/2 teaspoon of oregano
- Salt and pepper to taste
- 2 tablespoons of hot sauce
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and diced bell pepper to the skillet and cook for an additional 2-3 minutes.
- Stir in the diced tomatoes, diced okra, cayenne pepper, paprika, thyme, and oregano. Cook for 5-6 minutes, or until the vegetables are tender.
- Once the rice is cooked, add it to the skillet with the vegetables. Stir to combine and season with salt and pepper to taste.
- Drizzle 2 tablespoons of hot sauce over the rice and vegetables, then stir to evenly distribute the heat.
- Cook for an additional 2-3 minutes to allow the flavors to meld together.
