  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried oregano
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  • While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the diced onion, bell pepper, and celery. Cook for 5-7 minutes, or until the vegetables are softened.
  • Add the minced garlic, paprika, cayenne pepper, dried thyme, and dried oregano to the skillet. Cook for an additional 1-2 minutes, stirring constantly to toast the spices.
