Ingredients
- 1 cup of long-grain white rice
- 1 1/2 cups of vegetable broth
- 1 tablespoon of olive oil
- 1/2 block of firm tofu, pressed and cubed
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- In a medium saucepan, combine 1 cup of rice and 1 1/2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and celery. Cook for 5-7 minutes, or until the vegetables are softened.
