Ingredients
- 2 cans (5 oz) of tuna, drained
- 1/4 cup of breadcrumbs
- 1/4 cup of chopped red onion
- 1/4 cup of chopped cilantro
- 1 egg
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 2 ripe avocados, diced
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced red onion
- 1/4 cup of chopped fresh cilantro
- 1 jalapeno, seeded and diced
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large bowl, combine 2 cans of drained tuna, 1/4 cup of breadcrumbs, 1/4 cup of chopped red onion, 1/4 cup of chopped cilantro, 1 egg, 1 teaspoon of cumin, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper, and salt and pepper to taste. Mix until well combined.
- Form the tuna mixture into 4 patties and place them on a plate. Refrigerate for 10 minutes to firm up.
- While the patties are chilling, prepare the avocado salsa. In a medium bowl, combine 2 diced ripe avocados, 1/4 cup of diced red bell pepper, 1/4 cup of diced red onion, 1/4 cup of chopped fresh cilantro, 1 diced jalapeno, and the juice of 1 lime. Season with salt and pepper to taste. Gently toss to combine.
- Heat a non-stick skillet over medium heat. Add the tuna patties and cook for 3-4 minutes on each side, or until golden brown and heated through.
- Serve the spicy tuna patties with the refreshing avocado salsa on the side. Enjoy!
