Spicy Tofu Stir-Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 3 cloves of garlic, minced
- 1 teaspoon of fresh ginger, grated
- 1 teaspoon of red pepper flakes
- 1/4 cup of vegetable broth
- 2 green onions, chopped
- Cooked rice or noodles for serving
Instructions
- In a bowl, mix the cubed tofu with 1 tablespoon of soy sauce, sesame oil, and cornstarch until the tofu is well coated.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced red and yellow bell peppers, and onion. Cook for 3-4 minutes until they start to soften.
- Add the minced garlic, grated ginger, and red pepper flakes to the skillet. Cook for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth and remaining 1 tablespoon of soy sauce. Stir to combine and bring to a simmer.
- Return the cooked tofu to the skillet and toss to coat everything in the sauce. Cook for another 2-3 minutes until the tofu is heated through and the sauce has thickened slightly.
- Sprinkle with chopped green onions and serve the spicy tofu stir-fry over cooked rice or noodles. Enjoy!
