Spicy Tofu and Chickpea Stir-Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 1 can of chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 tbsp of soy sauce
- 1 tbsp of sriracha sauce
- 1 tbsp of rice vinegar
- 1 tbsp of sesame oil
- 1 tsp of cornstarch
- 1/2 tsp of red pepper flakes
- 2 green onions, chopped
- Cooked rice or noodles, for serving
- Salt and pepper to taste
- 2 tbsp of vegetable oil
Instructions
- In a small bowl, mix together 2 tbsp of soy sauce, 1 tbsp of sriracha sauce, 1 tbsp of rice vinegar, 1 tbsp of sesame oil, 1 tsp of cornstarch, and 1/2 tsp of red pepper flakes. Set aside.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- Add the remaining 1 tbsp of vegetable oil to the skillet. Add the sliced bell peppers, onion, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the drained and rinsed chickpeas to the skillet and stir-fry for an additional 2-3 minutes.
- Return the cooked tofu to the skillet and pour the sauce over the tofu and vegetables. Stir well to coat everything in the sauce and cook for another 2-3 minutes until heated through.
- Season with salt and pepper to taste. Sprinkle with chopped green onions.
- Serve the spicy tofu and chickpea stir-fry over cooked rice or noodles. Enjoy!
