Instructions

  • In a large bowl, toss 1 block of firm tofu cubes with 2 tablespoons of cornstarch until evenly coated.
  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the coated tofu cubes and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the sliced red and green bell peppers, and onion. Cook for 2-3 minutes until slightly softened.
  • Add 3 cloves of minced garlic and 1 tablespoon of grated ginger to the skillet. Cook for an additional 1-2 minutes until fragrant.
  • In a small bowl, whisk together 1/4 cup of low-sodium soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of Szechuan sauce, 1 tablespoon of brown sugar, 1 teaspoon of sesame oil, and 1/2 teaspoon of red pepper flakes. Pour the sauce over the vegetables in the skillet.
  • Return the crispy tofu to the skillet and toss to coat everything in the sauce. Cook for an additional 2-3 minutes until heated through.
  • Sprinkle with chopped green onions and serve the spicy Szechuan tofu stir-fry over cooked rice.
