  • 2 tablespoons of sriracha sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of grated ginger
  • 2 cloves of garlic, minced
  • 2 green onions, chopped
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of sriracha sauce, 1 tablespoon of sesame oil, grated ginger, and minced garlic. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and stir-fry for 5-7 minutes, or until golden brown and crispy. Remove tofu from the skillet and set aside.
  • In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes, or until they are tender-crisp.
  • Return the tofu to the skillet, pour the sauce over the tofu and vegetables, and toss to coat everything evenly. Cook for an additional 2-3 minutes to heat the sauce through.
  • To serve, spoon the quinoa onto plates, top with the spicy stir-fried tofu and mixed vegetables, and sprinkle with chopped green onions and cashew nuts.
  • Season with salt and pepper to taste. Enjoy!
