Spicy Stir-fried Tofu with Mixed Vegetables over Quinoa and Cashew Nuts

Ingredients
- 1 block of firm tofu, drained and cubed
- 1 cup of quinoa
- 2 cups of water
- 1 cup of mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 1/2 cup of cashew nuts
- 3 tablespoons of soy sauce
- 2 tablespoons of sriracha sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 2 green onions, chopped
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- In a small bowl, mix together 3 tablespoons of soy sauce, 2 tablespoons of sriracha sauce, 1 tablespoon of sesame oil, grated ginger, and minced garlic. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and stir-fry for 5-7 minutes, or until golden brown and crispy. Remove tofu from the skillet and set aside.
- In the same skillet, add the mixed vegetables and stir-fry for 3-4 minutes, or until they are tender-crisp.
- Return the tofu to the skillet, pour the sauce over the tofu and vegetables, and toss to coat everything evenly. Cook for an additional 2-3 minutes to heat the sauce through.
- To serve, spoon the quinoa onto plates, top with the spicy stir-fried tofu and mixed vegetables, and sprinkle with chopped green onions and cashew nuts.
- Season with salt and pepper to taste. Enjoy!
