Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup unsalted butter
- 1/4 cup fresh parsley, chopped
- 1/4 cup dry white wine
- 1 lemon, juiced
- Salt and pepper to taste
- 8 ounces linguine pasta
Instructions
- In a large pot, bring water to a boil and cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Season with salt and pepper to taste. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the unsalted butter. Once melted, add the white wine and lemon juice. Stir to combine and let it simmer for 2-3 minutes.
- Add the cooked linguine and chopped parsley to the skillet, tossing to coat the pasta with the garlic butter sauce.
- Return the cooked shrimp to the skillet and toss everything together until well combined and heated through.
- Serve the spicy garlic butter shrimp scampi immediately, garnished with additional chopped parsley and lemon wedges if desired. Enjoy!
