  • 4 lettuce leaves
  • 4 rice paper wrappers
  • 1/2 cup of shredded carrots
  • 1/2 cup of cucumber, julienned
  • 1/4 cup of fresh mint leaves
  • 1/4 cup of fresh cilantro leaves
  • 1/4 cup of chopped peanuts
  • Sweet chili sauce, for dipping

  • 1/2 cup of cucumber, julienned

  • 1/4 cup of chopped peanuts
  • Sweet chili sauce, for dipping

Instructions

  • In a bowl, combine 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of sriracha sauce, 1/2 teaspoon of garlic powder, 1/4 teaspoon of ground ginger, and 1/4 teaspoon of black pepper.
  • Add the peeled and deveined shrimp to the bowl and toss to coat. Let marinate for 10 minutes.
  • Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from heat and set aside.
  • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place the softened wrapper onto a clean, damp kitchen towel.
  • On the bottom third of the wrapper, place a lettuce leaf, followed by a few shrimp, shredded carrots, cucumber, mint leaves, cilantro leaves, and chopped peanuts.
  • Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
  • Repeat with the remaining wrappers and filling ingredients.
  • Serve the spicy shrimp rolls with sweet chili sauce for dipping.
