Spicy Shrimp Rolls

Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of sriracha sauce
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of ground ginger
- 1/4 teaspoon of black pepper
- 1 tablespoon of vegetable oil
- 4 lettuce leaves
- 4 rice paper wrappers
- 1/2 cup of shredded carrots
- 1/2 cup of cucumber, julienned
- 1/4 cup of fresh mint leaves
- 1/4 cup of fresh cilantro leaves
- 1/4 cup of chopped peanuts
- Sweet chili sauce, for dipping
Instructions
- In a bowl, combine 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of sriracha sauce, 1/2 teaspoon of garlic powder, 1/4 teaspoon of ground ginger, and 1/4 teaspoon of black pepper.
- Add the peeled and deveined shrimp to the bowl and toss to coat. Let marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove from heat and set aside.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Place the softened wrapper onto a clean, damp kitchen towel.
- On the bottom third of the wrapper, place a lettuce leaf, followed by a few shrimp, shredded carrots, cucumber, mint leaves, cilantro leaves, and chopped peanuts.
- Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
- Repeat with the remaining wrappers and filling ingredients.
- Serve the spicy shrimp rolls with sweet chili sauce for dipping.
