Created by: Howcan Team
Ingredients
- 1 lb spicy Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 6 cups chicken broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 2 cups spinach, chopped
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the spicy Italian sausage over medium heat, breaking it up into small pieces with a spoon, until browned and cooked through, about 8-10 minutes.
- Add the chopped onion and minced garlic to the pot and cook for 2-3 minutes until the onion is translucent.
- Stir in the diced carrots, celery, red bell pepper, and zucchini, and cook for another 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and chicken broth, then add the dried oregano, red pepper flakes, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, until the vegetables are tender.
- Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
- Taste the soup and adjust the seasoning if necessary.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
