Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large skillet, cook the spicy sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.
  • Add the chopped onion, minced garlic, and diced red bell pepper to the skillet. Cook for an additional 3-4 minutes until the vegetables are slightly softened.
  • Stir in the diced tomatoes, chicken broth, paprika, cayenne pepper, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
  • Transfer the sausage and vegetable mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese on top.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.
