Ingredients
- 1 lb spicy sausage, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen peas
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the sliced spicy sausage over medium heat until browned. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion, minced garlic, diced bell pepper, and diced zucchini. Cook for 5 minutes, or until the vegetables are softened.
