Ingredients
- 1 lb spicy sausage, casings removed
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
- 2 green onions, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the spicy sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
