Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the sliced sausage to the skillet and cook until browned, about 5 minutes. Remove the sausage from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced bell peppers and onion until they begin to soften, about 5 minutes.
  • Add the minced garlic to the skillet and cook for an additional 1 minute.
  • Stir in the diced tomatoes, Italian seasoning, and red pepper flakes. Season with salt and pepper to taste.
  • Return the cooked sausage to the skillet and stir to combine with the peppers and onions. Cook for another 5 minutes to allow the flavors to meld together.
  • Preheat the broiler in your oven.
  • Transfer the sausage and pepper mixture to a baking dish and sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  • Place the baking dish under the broiler for 3-5 minutes, or until the cheese is melted and bubbly.
